We do delicate work to our sushi by applying hidden cuts to each
seafood and adjusting the temperature of rice to each seafood.

Carefully selected rice is cooked slightly hard and mixed with red vinegar. Our rice, which we do not use sugar, is exquisitely mixed with salty and sour flavors, and when you put the toppings on it, everything is harmonized.

Red vinegar aged from carefully selected sake lees contains the umami of amino acids and organic acids. It is seasoned only with moshio salt, and the flavor that goes with the rice is even deep.
